A Crazy Easy Dessert Recipe in time for Christmas

It’s been a while between recipes for Poppet, but with all the Christmas lunches and dinners coming up this month I thought I’d shake things up a little. As anyone who tries out my recipes knows, I’m not one for stuffing around. Unless I can do it fast, easily and emerge with something damn delicious, I’m not interested. This frozen Oreo yoghurt pie is no different.
Here’s what you’ll need:
For the base
1 double packet Oreo cookies (28 biscuits all up)
¾ cup melted butter
For the filling
250ml whipping cream
350ml yoghurt (try five:am dark caramel if you want to get serious)
Here’s what to do
1. Put aside 4 Oreos and blend the rest in a mixer until you have a combination of crumbs and small chunks. Add melted butter, give it a quick whirl, and then mix together in a bowl until the butter covers the Oreo crumbs.
2. Make your pie or cake dish non-stick (butter, spray, oil, wax paper, etc.) and then firmly push the Oreo mix into the bottom.
3. Whip the cream until stiff peaks form, but not too much or it will turn into butter. Slowly fold in yoghurt, and then spread evenly on top of Oreo base.
4. Garnish the pie in Oreo crumbs, then chuck in the freezer for 3 hours or until firm.
And there you have it—simple as Oreo yoghurt pie.
