Hybrid Muesli & ANZAC Slice Recipe
If you love a good muesli slice and can't quite let go of ANZAC biscuits just yet, this is the recipe for you. This recipe is extremely quick and easy. You will have a batch of delicious and nutritious slice in less than 30 minutes, including cooking time. Let's get started.
Ingredients
2 crushed Weet-Bix
75g rolled oats
50g brown sugar
25g shaved coconut
50g self-raising flour (white or wholemeal)
50g wholemeal flour
50g raisins
40g pumpkin seeds (pepitas)
2 tablespoons water
2 tablespoons honey (or agave nectar or maple syrup)
75g butter
20g of other fillings such as dried fruit or chopped nuts to taste
(I used sunflower seeds, flax seeds, chia seeds and dried goji berries)
Method
1. Preheat oven to 170°C and line a square cake tin with baking paper. Melt butter, sugar, honey and water in the microwave or in a saucepan until the sugar has dissolved.
2. Mix the remaining incredients in a large bowl. Make a well in the mixture and add wet ingredients. Stir until combined and slightly moist.
3. Spoon mixture into baking tin and press down with a spoon until the surface is smooth. Bake for 15 to 20 minutes or until golden (depending on whether you prefer a chewy slice or a crunchy slice!) Allow to cool and slice into squares to serve.
