Spice your cake and eat it too


Chai Cake Recipe


I made this cake for a close friend’s birthday, and it went down a treat. It takes less than 10 minutes to prepare and you only need to cook it for 30 minutes. It's quick, easy and delicious. Please note that it is not necessary to use a cake tin in the shape of a heart, although you must admit it looks pretty damn cool!


You will need:

Ingredients group 1

300g self raising flour
185g brown sugar
250g soft butter
2 tablespoons of speculaas spice (from Dutch spice shop)
   OR use 1 tablespoon of 5 spice and 1 tablespoon of cinnamon

Ingredients group 2

300g almond meal
185g raw sugar
3 eggs 


The best part of this recipe is that there are only THREE steps… and here they are:

1. Mix together ingredients group 1 until you get a crumbly dough (hands work better than spoons!)



2. Mix together ingredients group 2 (should be a moist, grainy mixture)



3. Pack half of the ingredients group 1 mixture into the bottom of a greased cake tin then layer all of the ingredients group 2 mixture on top. Pack the rest of ingredients group 1 mixture on top of that, making sure the surface is smooth, and then sprinkle with flaked almonds.




That’s it! Then you bake it on 175 degrees for 30 minutes and BOOM! Chai cake!
